Power Cookies are 🔥🔥

Looking for something much healthier and tastier than store bought energy bars and gels? Thear are an excellent addition to your ‘portables‘ energy arsenal 💪🏼💪🏼💪🏼

4 cups oats

1 1/2 cup almond flour

1 tsp baking powder

1 tsp baking soda

3/4 tsp salt

3 ripe bananas 

1 cup maple syrup

1/3 cup coconut oil

1/3 cup water

2 TBS chia seeds

2 TBS flax seed

2 tsp vanilla extract 

1 cup dark chocolate chips

1 cup crushed pecans

1/3 cup sunflower seeds

1/3 cup pumpkins seeds

1/2 cup unsweetened shredded-coconut 

Preheat oven 350

Blend 2 cups of the oats in food processor into a flour

Combine maple syrup, bananas, water, vanilla and coconut oil in food processor. 

Mix all the dry ingredients, stir in the blended wet ingredients. 

Best if refrigerate for 2 hours before shaping into balls and placing on cookie sheet.  Wet hands to prevent sticking.   Bake best if use parchment paper on the cookie sheets.  Flatten before baking 

Bake 25 minutes.  Can freeze for up to couple of months. Grab and go!
